Sweet and Sour Pork

Crispy Chinese sweet and sour pork strips in tomato sauce.

Ingredients

  • 7 ozpork tenderloin, sliced into strips
  • 1egg, white only, for the marinade
  • 1 tbspcornstarch, for marinade and starchy sauce
  • 1/2 tspsalt, for marinade
  • 2 tspsoy sauce, approx 2 tsp; for the marinade
  • 2 tbsptomato paste, approx 2 tbsp; for the sauce
  • 1 tspsugar, for the sauce
  • 2 tsprice vinegar, approx 2 tsp; for the starchy sauce
  • water, a dash, for the starchy sauce and thinning
  • cooking oil, for deep frying
  • coriander, a little, to garnish

Method

    Separate the egg yolk and white. Slice the pork tenderloin into strips.

    Mix together the salt, cornstarch (reserve a little for the sauce), soy sauce and egg white to make the marinade. Toss the pork strips in the marinade and leave for 20 minutes.

    Mix the reserved cornstarch with a little water and the rice vinegar to make a starchy sauce. Set aside.

    Heat the cooking oil in a wok to 375F. Fry the marinated pork strips until golden brown. Remove and set on a plate.

    Leave a little oil in the wok. Add the tomato paste and sugar and heat, stirring, until the oil and sauce are fully combined.

    Add a splash of water and heat through, then add the fried pork strips. Pour in the starchy sauce and stir-fry until everything is coated and the sauce is glossy.

    Serve garnished with coriander.
