Sausage pasta

Sausages out of their skins, browned hard, then fennel, cream and penne.

Ingredients

  • 14 ozpork sausages, skins removed; check the packet if you need them wheat-free
  • 14 ozpenne
  • 2 tbspolive oil
  • 1onion, finely chopped
  • 3 clovegarlic, crushed
  • 2 tspfennel seeds, lightly crushed
  • 1/2 tspdried chili flakes
  • 14 ozchopped tomatoes, one can
  • 5/8 cupheavy cream
  • 1 3/4 ozvegetarian Italian hard cheese, grated
  • 1 tbspsea salt, most of it for the pasta water
  • 1/2 tspblack pepper

Method

    Heat the oil in a wide pan over high heat, squeeze the meat out of the skins in rough lumps, and fry without moving it until deeply browned underneath before breaking it up.

    Turn the heat down, add the onion and cook until soft, then stir in the garlic, crushed fennel seeds and chili flakes for a minute until fragrant.

    Add the tomatoes and simmer until thickened, then stir in the cream, season and let it bubble gently for a couple of minutes.

    Cook the penne in well-salted water until al dente and drain it into the sauce with a splash of the water, tossing until every tube is coated. Finish with the grated cheese.
