Brown the sausagemeat hard

Heat the oil in a wide pan over high heat, squeeze the meat out of the skins in rough lumps, and fry without moving it until deeply browned underneath before breaking it up.

— Leave it alone at the start. Stirring straight away drops the pan temperature and the meat greys rather than browns.
