Sausage casserole

Sausages, beans and peppers baked down into a smoky one-pot supper.

Ingredients

  • 8pork sausages
  • 2 tbspolive oil
  • 1onion, sliced
  • 2red peppers, cut into thick strips
  • 3 clovegarlic, sliced
  • 2 tspsmoked paprika
  • 14 ozchopped tomatoes, one can
  • 1 1/4 cupschicken stock
  • 14 ozcannellini beans, one can, drained and rinsed
  • 2bay leaves
  • 1 1/2 tspsea salt
  • 1/2 tspblack pepper
  • 1/4 ozfresh parsley, chopped, to serve

Method

    Heat the olive oil in a wide casserole and brown the sausages all over, then lift them onto a board and cut each one into three thick pieces.

    Add the onion and peppers to the same pot and cook until they have softened and picked up a little color, then stir in the garlic and smoked paprika and cook for another minute.

    Pour in the chopped tomatoes and the chicken stock, add the bay leaves, the salt and the pepper, and return the cut sausages with any juices. Bring it up to a simmer.

    Heat the oven to 350°F and cook the casserole uncovered until the sauce has reduced and darkened and the peppers are completely soft.

    Stir the drained cannellini beans through and return the pot to the oven for a few minutes to heat them, then scatter with parsley and serve.
