Brown the sausages whole

Heat the oven to 350°F. Heat the olive oil in a wide ovenproof casserole and brown the sausages all over, then lift them onto a board and cut each one into three thick pieces.

— Whole first, cut second. Sliced raw sausage loses its shape and turns the casserole into mince.
