Runner Bean Mash (Snijbonen Stamppot)

Dutch runner bean and potato stamppot with crispy bacon

Ingredients

  • 14 ozgreen beans, washed and chopped
  • 1 clovegarlic
  • 1onion, chopped
  • 1 3/4 lbpotatoes, peeled and diced
  • 2 tbspbutter, plus an extra knob for the mash
  • 1 tbspwholegrain mustard
  • 1/4 cupmilk, splash, for the mash
  • 1 cupcheese, grated (Gouda or mild cheddar)
  • 2 1/2 ozbacon, to serve
  • salt

Method

    Wash and chop the green beans. Place in a saucepan of salted water, bring to a boil, and cook for about 10 minutes until al dente. Drain and set aside.

    In a separate pot, cook the potatoes in salted water until tender. Drain.

    Melt a little butter in a skillet and sauté the onion until translucent. Add the garlic and cook briefly. Add the green beans and stir-fry for a few minutes.

    Mash the potatoes with a pat of butter and a splash of milk. Fold in the runner bean mixture and grated cheese. Season with salt, pepper, and mustard.

    Fry the bacon until crispy. Serve the mash topped with the crispy bacon.
