Red Curry Chicken Kebabs
Charred Thai red curry chicken and vegetable skewers.
Ingredients
- 2chicken breasts, cut into chunks
- 2 tbspthai red curry paste
- 2 tbspcoconut milk
- 1red pepper, chopped into chunks
- 1zucchini, chopped into chunks
- 1red onion, cut into thin wedges
- lime, halved; to serve
Method

Light the barbecue or set a grill pan over high heat so it is properly hot before anything touches it.

Mix the chicken chunks with the red curry paste and the coconut milk until every piece is coated in the same rust-colored film.

Thread the chicken onto skewers, alternating with the pepper, zucchini and onion wedges so nothing sits directly against its neighbor.

Cook the skewers for 5–8 minutes, turning them every so often, until the chicken is firm all the way through and the edges have caught color.

Serve with herby rice and a sharp salad, with a lime half to squeeze over at the table.
