Ramen Noodles with Marinated Boiled Egg
Ramen noodles topped with a soy-marinated soft-boiled egg.
Ingredients
- 1ramen noodles, 1 packet
- 2 cupswater, for cooking noodles
- 1egg, large; boiled 6.5 to 7 minutes for a soft yolk
- 1 tbspsoy sauce, for the broth
- 1/2 tspchili sauce
- 1 tbspscallions, sliced; for garnish
- 1/2 tspsalt
- 1/2 tbspblack pepper
- 1 tbspmirin, for the egg marinade
- 1 tspsugar, for the egg marinade
- 2 tbspsoy sauce, for the egg marinade, poured off afterward (not consumed)
Method

Bring a pot of water to the boil and lower the egg in gently. Cook it for exactly 6½ to 7 minutes — any longer and the yolk sets.

Lift it straight into a bowl of iced water for 3–5 minutes to stop it cooking, then peel it carefully.

Mix the soy sauce for the marinade with the mirin, the sugar and 4 tbsp of water, submerge the peeled egg and leave it in the fridge for at least 4 hours or overnight.

Bring the 2 cups of water to the boil and season it with the soy sauce for the broth, the chili sauce, the salt and the black pepper.

Add the ramen noodles and cook them to the packet timing.

Tip the noodles and broth into a bowl, halve the marinated egg and set it on top so the yolk runs into the broth. Scatter the sliced scallions over.
