Quick Salt & Pepper Squid
Chargrilled squid with five-spice, sesame oil and sweet chili dip.
Ingredients
- 14 ozsquid, cleaned; body opened out and scored in a criss-cross
- 3 tbspneutral oil, for brushing
- 1/2 tspchinese five-spice powder
- 2 tspsea salt
- 1 tspblack pepper, freshly ground
- sesame oil, a dash, to finish
- fresh cilantro, a few sprigs, to garnish
- sweet chili sauce, a drizzle, to serve
Method

Clean the squid (or ask your fishmonger to do it). Cut open the body and open out flat. Wash well and pat dry. Score the top in a criss-cross pattern with the tip of a sharp knife.

Brush the squid with oil. Heat a barbecue or grill pan until very hot.

Mix together 2 tsp sea salt, the Chinese five-spice and 1 tsp freshly ground black pepper. Sprinkle over both sides of the squid just before cooking.

Cook the squid for about 1 minute on each side until it starts to curl and char at the edges.

Transfer to a serving plate and drizzle with sesame oil. Garnish with cilantro and serve with sweet chili sauce.
