Charred Thai flat noodles with chicken and dark soy.
Ingredients
- 6 ozrice stick noodles, wide flat noodles; soaked if dried
- 2 tbspdark soy sauce, for sauce
- 2 tbspoyster sauce, for sauce
- 2 tspsoy sauce, for sauce
- 2 tspwhite vinegar, for sauce
- 2 tspsugar, for sauce
- 2 tbspwater, for sauce
- 2 tbsppeanut oil
- 2 clovesgarlic, minced
- 1 cupchicken, sliced breast or thigh
- 1egg
- 4 cupsChinese broccoli, stems and leaves separated
Method
- 1
If your noodles are dried, soak them in warm water for 20 to 30 minutes, or as the package says, until pliable, then drain. Fresh noodles just need pulling apart.
- 2
Mix all the sauce ingredients (dark soy sauce, oyster sauce, soy sauce, white vinegar, sugar and water) together in a small bowl and set aside.
- 3
Put the oil and garlic in a wok and set it over high heat. Once it sizzles, add the chicken and Chinese broccoli stems and stir-fry for 3 to 4 minutes, until the chicken is light golden and cooked through with no pink inside.
- 4
Push the chicken and stems to the side of the wok. Crack the egg into the space and scramble it.
- 5
Add the noodles, Chinese broccoli leaves and sauce. Toss gently until the noodles are stained dark and the leaves have wilted, then serve straight away.
