Ingredients

  • 2 piecesbread, thick slices; rustic or sourdough works well
  • 2 clovesgarlic, halved
  • 3tomatoes, halved; rubbed cut-side-down onto bread
  • 2 tbspextra virgin olive oil, a drizzle
  • sea salt, to taste

Method

  1. 1

Toast the bread slices in a toaster, or heat the oven to 400°F and bake them on a baking sheet until crisp and golden. The time depends on the type and thickness of the bread.

  2. 2

Rub a halved garlic clove cut-side-down firmly all over the top of each slice of bread.

  3. 3

Rub a tomato half cut-side-down over the surface of the bread, squeezing gently so the tomato pulp soaks into the bread.

  4. 4

Drizzle lightly with extra virgin olive oil and sprinkle with a pinch of sea salt.

  5. 5

Repeat with the remaining slices and serve immediately while warm.
