Matar Paneer
Fried paneer and peas in a fragrant Indian tomato sauce.
Ingredients
- 1 tbspsunflower oil
- 8 ozpaneer, cut into cubes
- ginger, likely 2 cm piece, grated
- 1 tspground cumin
- 1 tspturmeric
- 1 tspground coriander
- 1green chili
- 4tomatoes, large
- 1 cuppeas, fresh or frozen
- 1 tspgaram masala
- fresh cilantro, small, leaves only, to garnish
- 2naan bread, to serve
Method

Heat the oil in a skillet over high heat until shimmering. Add the paneer, reduce heat slightly, and fry until browned at the edges, turning to brown all sides. Remove and drain on paper towels.

Add the ginger, ground cumin, turmeric, ground coriander, and green chili to the pan and fry for 1 minute.

Add the tomatoes and mash with the back of a spoon. Simmer for 5 minutes until the sauce smells fragrant. Add a splash of water if too thick. Season well.

Add the peas and simmer for 2 minutes, then stir in the fried paneer and sprinkle over the garam masala. Top with cilantro and serve with naan, roti, or rice.
