Kurabie Butter Cookies
Soft Middle Eastern butter cookies with yogurt and egg glaze.
Ingredients
- 5 1/2 cupsflour, plus extra if dough is too sticky
- 1 1/8 cupsgreek yogurt
- 3eggs, for dough
- 1 cupsugar
- 1/2 cupbutter, melted; for dough
- 1 tspbaking powder
- 1 dropvanilla extract, very small amount
- 1egg, beaten; for egg wash
- 2 tspbutter, extra melted butter; rubbed on hands before rolling each ball
Method

In a large bowl, combine all the dough ingredients (flour, yogurt, 3 eggs, sugar, 120g melted butter, baking powder, vanilla). Mix until a dough forms. It should be slightly sticky — add extra flour if needed.

Rub some of the extra melted butter over your hands. Divide the dough into 20 equal pieces and roll each into a smooth ball, rubbing a little butter on your hands between each one.

Place the balls on a greased or lined baking sheet, spaced 5cm apart. Bake in two batches if needed.

Brush each ball with the beaten egg. Bake at 350°F for 20 minutes until light golden and slightly soft in the center. Cool on a rack.
