Kofta Burgers
Spiced lamb kofta burgers piled into warm pitta bread.
Ingredients
- 2 1/4 lbground lamb
- 2onion, grated or very finely chopped
- 1 headgarlic, whole head; all cloves crushed or grated
- 6 tbspgaram masala, unusually large quantity
- 1 bunchcoriander, fresh; finely chopped
- 1 tbspchili sauce
- 8pitta bread, to serve
- 4tomatoes, sliced; for serving
- 1/2red cabbage, shredded; for serving
- 1red onion, sliced; for serving
- 10 1/2 ozyogurt, small pot; for serving
Method

Tip the ground lamb into a large bowl with the onion, garlic, garam masala, coriander, chili sauce and a good pinch of salt. Mix well with your hands until completely combined.

Shape the mixture into 16 small flat burgers. These can be chilled for up to 1 day or frozen for up to 1 month.

Heat the broiler to its highest setting. Lay the burgers in a single layer on a baking sheet and broil on the highest shelf for 5 to 6 minutes on each side until browned and cooked through.

Pile the burgers on a platter and serve with warm pitta, sliced tomatoes, red cabbage, red onion and yogurt.
