Jalapeño poppers

Halved and scraped out, filled with cream cheese and cheddar, baked until the tops blister.

Ingredients

  • 12jalapeño chilies, large, halved lengthways
  • 8 3/4 ozcream cheese, at room temperature
  • 3 1/2 ozmature cheddar, grated
  • 3scallions, finely sliced
  • 1 tspsmoked paprika
  • 1 tspgarlic powder
  • 1/2 tspsea salt
  • 1/2 ozfresh cilantro, leaves and fine stalks, chopped

Method

    Halve each jalapeño lengthways through the stalk and scrape out the seeds and, more importantly, the pale ribs inside. Wear gloves if you have them.

    Mix the cream cheese with the cheddar, scallions, smoked paprika, garlic powder and salt until evenly combined.

    Pack the filling into each half, level with the top, and sit them filling-side up on a baking sheet lined with paper.

    Heat the oven to 400°F and bake until the cheese is browned in patches and the chili skins have blistered and slackened. Scatter the coriander over and let them cool for five minutes before serving.
