Dutch Doughnuts (Oliebollen)

Dutch yeasted dough balls fried until golden and puffy.

Ingredients

  • 1 1/8 lbflour
  • 2 1/8 cupmilk, lukewarm
  • 1/4 ozinstant yeast
  • 1/4 ozsalt
  • 1 ozsugar
  • oil, for deep frying at 180°C

Method

    Warm the milk to lukewarm if cold. Combine the flour, instant yeast and sugar in a large bowl. Gradually mix in the warm milk until you have a smooth batter. Add the salt and stir with a wooden spoon until smooth and pourable.

    Cover with a clean tea towel and leave in a warm place for about 1 hour to rise.

    Heat a deep fryer or large pot of oil to 350°F.

    Stir the batter, then dip two spoons or an ice cream scoop into the hot oil first, then into the batter. Carefully drop the batter into the oil in batches, without overcrowding. Fry until golden brown on both sides — they will often turn themselves automatically.

    Lift the doughnuts out as they turn golden brown and leave them to drain on kitchen paper. Eat them warm.
