Apam Balik
Malaysian folded pancake with peanut, corn and butter filling.

Ingredients
- 3/4 cupmilk
- 4 tbspoil, neutral oil
- 2eggs
- 1 1/3 cupsall-purpose flour, use 160 g
- 1 tbspbaking powder
- 1/2 tspsalt
- 2 tbspunsalted butter, for the filling
- 3 1/2 tbspsugar, for the filling
- 3 tbsppeanut butter, for the filling; crushed roasted peanuts work just as well
- 1/2 cupcreamed corn, for the filling; about half a small can, spooned over the pancake before folding

Mix together the milk, oil and eggs. Sift in the flour, baking powder and salt. Stir until a smooth batter forms.

Heat a pan over medium heat. Spread a thin layer of batter across the pan and up the sides slightly. Cover and cook for 30–60 seconds until small air bubbles appear across the surface.

Add butter, creamed corn, crushed peanuts (or peanut butter) and sugar over the pancake. Fold in half once the bottom is lightly browned.

Cut into wedges and serve warm.
