Tzatziki
Strained yogurt, salted cucumber and enough garlic to notice.
Ingredients
- 1 1/8 lbGreek yogurt, full-fat, strained
- 1cucumber, coarsely grated
- 2 clovesgarlic
- 3 tbspextra virgin olive oil
- 1 tbspred wine vinegar
- 1/4 ozdill, fronds chopped
- 1 tspsea salt
Method
- 1
Grate the cucumber onto a clean dish towel set in a strainer, toss it with half the salt and leave it to drain over the sink.
- 2
Gather the dish towel into a bundle and squeeze hard, twisting until no more liquid comes. You want a dry, almost fluffy handful.
- 3
Crush the garlic to a smooth paste with the remaining salt, using the flat of a knife against the board.
- 4
Beat the yogurt with the garlic paste, the olive oil and the vinegar until it is glossy and holds a ribbon.
- 5
Fold through the squeezed cucumber and the dill, then cover and leave in the fridge so the garlic mellows and the flavors meet.
