Turkey meatballs

Lean mince kept juicy with soaked bread, simmered in a simple tomato sauce.

Ingredients

  • 2 slicewhite bread, crusts removed, torn up
  • 1/3 cupwhole milk
  • 1 1/8 lbground turkey
  • 1egg, beaten
  • 1 1/2 ozParmesan cheese, finely grated
  • 3 clovegarlic, crushed
  • 1/2 ozfresh parsley, chopped
  • 1 1/2 tspsea salt
  • 1/2 tspblack pepper
  • 2 tbspolive oil
  • 1onion, finely chopped
  • 1.8 lbchopped tomatoes, two cans
  • 1 tspdried oregano
  • 1/4 ozfresh basil, leaves torn

Method

    Put the torn bread in a large bowl, pour the milk over it, and leave it until the bread has drunk the milk and collapsed into a paste. Mash it smooth with a fork.

    Add the ground turkey, the beaten egg, the Parmesan, the crushed garlic, the parsley, the salt and the pepper to the soaked bread and mix with your hands until just combined, then roll into balls a little smaller than a golf ball.

    Heat the olive oil in a wide pan and brown the meatballs on two or three sides, turning them gently. They do not need to be cooked through at this point.

    Lift the meatballs out, soften the onion in the same pan, then add the chopped tomatoes and the oregano and simmer until the sauce has lost its raw edge and thickened slightly.

    Return the meatballs to the pan, spoon sauce over them, and simmer gently until they are cooked right through. Tear the basil over just before serving.
