Tuna Melt
Cheese under and over the tuna, and a low pan, so the middle melts before the bread burns.
Ingredients
- 7 ozcanned tuna, drained well
- 3 tbspmayonnaise
- 2green onions, sliced
- 4 slicebread
- 3 1/2 ozcheddar, grated
- 1 ozbutter, softened

Press the tuna against the lid of the can to squeeze out as much liquid as you can, then mix it with the mayonnaise and green onions. Wet tuna makes a soggy sandwich no amount of toasting will fix.

Butter one side of each slice of bread. That buttered face goes against the pan, not against the filling.

On the unbuttered face of two slices, put a quarter of the cheese, then half the tuna, then another quarter of the cheese, then close with the remaining slices, buttered side out.

Cook in a dry skillet over medium-low heat for about 4 minutes a side, pressing gently, until the bread is golden and the cheese has run. If the bread is browning before the cheese melts, the heat is too high — turn it down and give it longer.

Let each sandwich sit for a minute before cutting, so the filling sets enough to stay inside.
