Once the potatoes are just cool, whisk together the shallots, spring onions, chives, sherry vinegar, extra virgin olive oil and honey with a little more seasoning to make the dressing.

Gently toss the sweet potato chunks through the dressing using your hands to avoid breaking them up. Serve immediately or refrigerate until needed.
