Sweet potato fries
A thin cornstarch coating and a hot tray — the only way these crisp in an oven.
Ingredients
- 1.8 lbsweet potatoes, cut into finger-thick batons
- 2 tbspcornstarch
- 3 tbspolive oil
- 1 tspsmoked paprika
- 1 tspgarlic powder
- 1 1/2 tspsea salt
- 1/2 tspblack pepper
Method

Heat the oven to 425°F with a large baking sheet inside it. Cut the sweet potatoes into batons of roughly equal thickness and pat them completely dry with a cloth.

Put the batons in a bowl, scatter the cornstarch over, and toss until every piece carries a faint pale film with no dry pockets left in the bowl.

Add the olive oil, smoked paprika, garlic powder, salt and pepper and toss again until the fries are evenly coated and glossy.

Spread the fries in a single layer on the hot tray with space between them, and bake until the undersides are browned and crisp.

Turn the fries over and bake until crisp on both sides and darkened at the tips. Eat them straight away.
