Wring the spinach out

Squeeze the defrosted spinach in a clean dish towel over the sink, twisting until no more water comes out, then pull it apart so it is not one solid lump.

— You should get a surprising amount of liquid out — well over a cupful. Anything left behind ends up as a pool under the dip.
