Spiced Tortilla
Heat the oil in a large ovenproof skillet. Fry the onion and half the chili for 5 minutes until softened.
Step 2
Add the curry powder and fry for 1 minute. Add the cherry tomatoes, potatoes and coriander stalks. Season the beaten eggs well, then pour over the vegetables. Cook gently for 8–10 minutes until almost set.
Step 3
Heat the broiler and flash the tortilla underneath for 1–2 minutes until the top is fully set.
Step 4
Scatter with the cilantro and remaining chili. Slice into wedges and serve with a green salad.
