Soy Butter Pasta

Butter, soy sauce and garlic. It should not work this well and it does.

Ingredients

  • 7 ozspaghetti
  • 1 3/4 ozunsalted butter
  • 3 clovesgarlic, thinly sliced
  • 2 tbspsoy sauce
  • 2green onions, sliced
  • 1 tspblack pepper

Method

    Boil the spaghetti in well-salted water until al dente. Save a mugful of the water before draining.

    While it boils, melt the butter in a wide skillet over medium-low heat and add the garlic. Cook gently until it smells sweet and is barely golden, about 2 minutes. Browned garlic turns bitter and there is nothing else here to hide behind it.

    Take the pan off the burner and pour in the soy sauce — it will spit if the pan is very hot, and boiling soy sauce hard turns it harsh.

    Tip the drained spaghetti into the pan with a splash of the pasta water, return it to low heat and toss hard for a minute until the butter, soy and water emulsify into a glossy sauce that coats the strands.

    Off the heat, add the green onions and a good amount of black pepper, and toss once more.
