Sopa de Fideo

Toasted noodles in a tomato broth — a pantry dinner with nothing fresh in it.

Ingredients

  • 7 ozfideo noodles, or broken vermicelli
  • 14 ozcanned plum tomatoes, one can
  • 2 clovegarlic, peeled
  • 1 quartchicken stock
  • 2 tbspvegetable oil
  • 1 tspsea salt, or to taste

Method

    Put the canned tomatoes and the peeled garlic into a blender and blitz until completely smooth. Set the blended tomatoes aside within reach of the stove — the next step moves fast.

    Heat the oil in a heavy pot over a medium heat and add the fideo. Stir constantly for 3 to 4 minutes until they turn the color of straw and smell nutty. They go from gold to burnt in about twenty seconds, so do not walk away.

    Pour the blended tomatoes straight onto the toasted noodles — it will hiss hard — and stir for 3 minutes until it darkens and thickens around them.

    Add the stock and the salt, bring to a simmer and cook for 8 to 10 minutes, until the noodles are soft and the broth has thickened slightly. Taste for salt and serve hot.
