Simple Tomato Soup
A can of good tomatoes, an onion, and butter. Blended smooth in half an hour.

Ingredients
- 1.8 lbcanned whole tomatoes, two 400 g cans
- 1onion, chopped
- 2 clovesgarlic, sliced
- 2 1/8 cupsvegetable stock
- 1 ozunsalted butter
- 1/4 ozfresh basil, a small handful, plus more to serve
- 1 tspsea salt, to taste

Melt half the butter in a saucepan over medium heat. Add the onion with a pinch of salt and cook until soft and translucent, about 8 minutes, then add the garlic and cook one minute more until fragrant.

Tip in the canned tomatoes with their juice, breaking them up with a spoon, then pour in the stock. Bring to a simmer.

Turn the heat down and let the soup simmer gently, uncovered, for 15 minutes so the flavors come together and the raw edge cooks off the tomatoes.

Take the pan off the heat, add the basil, and blend smooth with a stick blender. Stir in the rest of the butter, taste for salt, and serve with more torn basil on top.
