Simple Minestrone

The weeknight version: a soffritto, a can of tomatoes, beans, and small pasta. One pot, forty minutes.

Ingredients

  • 1onion, finely chopped
  • 2carrot, finely chopped
  • 2 stalkscelery, finely chopped
  • 14 ozcanned diced tomatoes, one can
  • 8 1/2 ozcannellini beans, one 400 g can, drained
  • 1 1/4 quartsvegetable stock
  • 4 1/4 ozditalini pasta, or other small pasta
  • 2 tbspolive oil
  • 1 1/2 ozparmesan, grated, to serve
  • 1 tspsea salt, to taste

Method

    Warm the olive oil in a large pot over medium heat. Add the onion, carrot, and celery with a pinch of salt and cook slowly, stirring now and then, until soft and sweet, about 10 minutes.

    Tip in the canned tomatoes, the drained beans, and the stock. Bring to a boil, then lower to a simmer.

    Simmer for 12 minutes to let the flavors settle, then add the pasta and cook until just tender, another 8 to 10 minutes.

    Taste and add salt until the soup tastes full. Ladle into bowls and grate parmesan generously over each one.
