Simple Lentil Soup
Red lentils, a few aromatics, and cumin, finished with a squeeze of lemon. Naturally vegan.

Ingredients
- 8 3/4 ozdried red lentils, rinsed
- 1onion, chopped
- 1carrot, chopped
- 2 clovesgarlic, sliced
- 2 tspground cumin
- 1 quartvegetable stock
- 2 tbspolive oil
- 1lemon, juiced
- 1 tspsea salt, to taste
Method

Warm the olive oil in a pot over medium heat. Add the onion and carrot with a pinch of salt and cook until softening, about 6 minutes, then stir in the garlic and cumin and cook one minute until fragrant.

Stir in the rinsed red lentils, then pour in the stock. Bring to a boil, then turn the heat down to a simmer.

Simmer gently, stirring now and then so the lentils do not catch on the bottom, until they have collapsed and the soup is thick, about 18 minutes.

Take the pot off the heat and stir in the lemon juice. Taste, and add more salt or lemon until it tastes bright rather than flat. Blend smooth if you like, or serve as it is.
