Yogurt-and-garlic marinated chicken skewers, grilled hard and finished with sumac.
Ingredients
- 1 3/4 lbchicken thighs, boneless, cut into large cubes
- 5 1/4 ozGreek yogurt
- 6 clovesgarlic, crushed
- 1lemon, juice only
- 1 tbsptomato paste
- 2 tspsweet paprika
- 1 tspground allspice
- 3 tbspextra virgin olive oil
- 2 tspsea salt
- 1/2 ozflat-leaf parsley, chopped, to serve
- 1 tspsumac, to finish
Method
- 1
Whisk the yogurt with the garlic, lemon juice, tomato paste, paprika, allspice, olive oil and salt until smooth.
- 2
Turn the chicken through the marinade until every piece is coated, cover, and refrigerate for four hours or overnight. If your skewers are wooden, put them in water to soak for the last half hour so they don't burn.
- 3
Thread the chicken onto the skewers, pushing the pieces together firmly rather than spacing them out, and scrape off any thick clots of marinade.
- 4
Grill over high heat for 12 to 15 minutes, turning every couple of minutes, until charred in patches and 165°F in the thickest piece.
- 5
Rest the skewers for five minutes, then scatter with parsley and sumac.
