Sesame Noodles
Whisk five things in the bowl you serve from. Nothing gets cooked but the noodles.
Ingredients
- 12 1/4 ozdried wheat noodles
- 1/4 cupsmooth peanut butter
- 3 tbspsoy sauce
- 2 tbsptoasted sesame oil
- 2 tbsprice vinegar
- 1 tbsphoney
- 4green onions, sliced

Whisk the peanut butter, soy sauce, sesame oil, rice vinegar and honey together in a large bowl. It will look split and stiff at first and come together as you keep going.

Cook the noodles in boiling water according to the package. Before draining, scoop out a mugful of the water.

Whisk 4 tablespoons of the hot noodle water into the sauce, a spoonful at a time, until it is the consistency of thin cream. Adding more oil instead would make it greasy; the starchy water makes it cling.

Drain the noodles, rinse them briefly under cold water so they stop cooking and stay separate, then tip them into the bowl and toss until every strand is coated. Scatter the green onions over.
