Sardines on Toast

A can, a slice of good bread, and a lemon. Ten minutes, no stove beyond the toaster.

Ingredients

  • 8 1/2 ozcanned sardines, two cans in olive oil, oil reserved
  • 4 slicesourdough bread, thick cut
  • 1lemon, half zested, both halves for squeezing
  • 1/4 ozflat-leaf parsley, roughly chopped
  • 1 tspblack pepper, coarsely ground

Method

    Toast the sourdough until it is well browned and firm — darker than you would want it with butter. It has to hold up to oil and fish without going soft.

    Open the sardines and tip the oil from the cans into a small bowl — do not pour it away. Lift the fish out gently and check for the fin along the back, which lifts off with a fingernail if it bothers you.

    Brush each slice with some of the reserved oil, then mash half the sardines directly onto the toast with a fork so they sink into the surface. Lay the remaining whole fillets on top.

    Grate the lemon zest over the top, squeeze over the juice of half the lemon, scatter with parsley and grind over far more black pepper than seems reasonable. Eat straight away.
