Ingredients

  • 8 3/4 ozkefalograviera cheese, cut into two thick slabs
  • 3 tbspall-purpose flour, for dusting
  • 3 tbspextra virgin olive oil
  • 1lemon, cut into wedges
  • 1/2 tspdried oregano
  • 1/4 tspblack pepper, coarsely cracked

Method

  1. 1

Run the slabs of cheese briefly under cold water, shake them off, then press them into the flour so every face is covered. Knock off the excess.

  2. 2

Heat the olive oil in a small heavy skillet over a high flame until it shimmers and moves like water when you tilt it.

  3. 3

Lay the cheese in and leave it alone until the underside is a deep even gold, then turn it once and do the same on the other side.

  4. 4

Slide it straight onto a warm plate, squeeze a lemon wedge over the top and finish with the oregano and cracked pepper.
