Rock Cakes

Classic British fruited rock cakes, craggy and golden.

Ingredients

  • 1 3/4 cupsself-rising flour
  • 1/3 cupsuperfine sugar
  • 1 tspbaking powder
  • 4 1/2 ozbutter, cold; cubed; rubbed into flour
  • 1 cupdried fruit, mixed dried fruit such as currants, golden raisins or raisins
  • 1eggs, beaten with milk and vanilla
  • 1 tbspmilk, plus a little more if needed
  • 2 tspvanilla extract

Method

    Preheat oven to 350°F / Gas 4. Line a baking sheet with parchment.

    Mix the flour, sugar and baking powder in a bowl. Add the cold cubed butter and rub it in with your fingertips, lifting the mixture as you go, until it looks like coarse breadcrumbs with no large lumps left. Stir in the dried fruit.

    Beat the egg and milk together with the vanilla extract. Add to the dry ingredients and stir until the mixture just comes together as a thick, lumpy dough. Add a teaspoon more milk if needed.

    Place golf-ball-sized spoonfuls of dough onto the prepared tray, spaced well apart — they will spread to about double in size.

    Bake for 15–20 minutes until golden-brown. Cool for a couple of minutes, then transfer to a wire rack.
