Reduce the heat. Add half the flour and whisk well until fully incorporated. Continue cooking, stirring occasionally, until fat begins to release. Spoon off and save as much of the separated fat as you can.

Step 3

Whisk in the remaining flour, then slowly add the milk, whisking constantly to avoid lumps. Cook over low heat for 5 minutes. Add the salt.

Step 4

Serve with a sprinkling of sugar and cinnamon and a drizzle of the reserved fat or melted butter.
