Reuben sandwich

Salt beef, sauerkraut and Swiss on rye, griddled until the cheese runs.

Ingredients

  • 4 slicerye bread
  • 8 3/4 ozsalt beef, thinly sliced; corned beef brisket
  • 5 1/4 ozsauerkraut, drained and squeezed dry
  • 3 1/2 ozSwiss cheese, sliced
  • 3 tbspmayonnaise, contains egg
  • 1 tbsptomato ketchup
  • 2gherkins, finely chopped
  • 1 ozsalted butter, softened

Method

    Stir the mayonnaise, ketchup and chopped gherkins together in a small bowl.

    Squeeze the drained sauerkraut in your hands over the sink until no more liquid comes out, then loosen it up again.

    Spread dressing on the inner face of all four slices. On two of them layer cheese, salt beef, sauerkraut and more cheese, then close the sandwiches and butter the outsides.

    Cook over medium-low heat, pressing with a spatula, until the bread is dark and crisp and the cheese has run at the edges. Turn once, and cut in half on the diagonal.
