Red Onion Pickle
Sharp, tangy quick-pickled red onions in cider vinegar

Ingredients
- 3red onions, large, finely sliced into half-moons
- 2 tspsea salt, for brining
- 0.83 cupcider vinegar
- 3 1/2 tbspwater
- 1/4 cupgranulated sugar
- 1 tspblack pepper
- 4bay leaves
Method

Peel, halve, and finely slice the onions into half-moon pieces. Put in a colander over a bowl, sprinkle with salt, and toss to coat all surfaces. Set aside for about 1 hour to brine.

Put the cider vinegar, 50ml water, and sugar in a saucepan. Bring to a simmer, stirring to dissolve the sugar. Cook for 2 minutes, then set aside.

Pack the brined onions into sterilized jars, sprinkling in black pepper as you go. Pour over the warm vinegar and tuck bay leaves down the sides. Seal. Store in the fridge and use within 4 weeks.
