Pulled pork

Pork shoulder rubbed and cooked low for hours until it shreds with two forks.

Ingredients

  • 4.4 lbpork shoulder, boneless, skin removed
  • 1/4 cupdark brown sugar
  • 2 tbspsmoked paprika
  • 1 tbspsea salt
  • 2 tspgarlic powder
  • 2 tsponion powder
  • 1 tspmustard powder
  • 2 tspblack pepper
  • 1onion, thickly sliced
  • 3/8 cupcider vinegar
  • 7/8 cupstrained tomatoes, sifted tomatoes
  • 2 tbsphoney

Method

    Mix the brown sugar, smoked paprika, salt, garlic powder, onion powder, mustard powder and black pepper together, then rub the mixture into every surface of the pork shoulder. Leave it in the fridge if you have time.

    Lay the sliced onion in the base of a slow cooker or a deep roasting pan, sit the pork on top, and pour the cider vinegar around it — not over the rubbed surface.

    Cook on low in a slow cooker, or covered tightly with foil in the oven at 300°F, until a fork twisted into the thickest part turns with no resistance at all.

    Lift the pork onto a board and let it rest, then pull it apart with two forks, discarding any large lumps of fat. Skim the fat from the cooking juices and keep the liquid underneath.

    Stir the strained tomatoes and honey into some of the skimmed cooking juices to make a loose sauce, then fold just enough of it through the shredded pork to coat it. Serve the rest at the table.
