Test the oil with three kernels

Put the oil and exactly three kernels into a large heavy pan, cover, and set over medium-high heat until all three have popped.

— This is the only reliable way to judge the temperature. Too cool and the kernels sit in oil and go greasy; too hot and they scorch.
