Polish Patties (Kotlety)

Golden-crusted Polish beef patties, tender and savory

Ingredients

  • 1bread roll, soaked in milk to soften
  • 1/2 cupmilk, for soaking bread roll
  • 1onion, chopped
  • 7 tbspvegetable oil, for frying onion and patties
  • 1 1/8 lbground beef
  • 1egg
  • 1 clovegarlic
  • marjoram, dried
  • 3/4 cupdried breadcrumbs, for coating

Method

    Tear the bread roll into a bowl, pour the milk over it and leave it to soak until completely soft.

    Meanwhile, fry the chopped onion in a splash of the oil for about 8 minutes, until soft and golden at the edges. Let it cool a little.

    Squeeze the milk out of the bread with your hands and drop the bread into a large bowl with the beef, the egg, the garlic, the marjoram and plenty of salt and pepper.

    Add the cooled onion and mix everything with your hands until it holds together evenly. Fry a teaspoon of it to taste the seasoning before you shape the rest.

    Divide the mixture into 8 and shape each piece into an oval patty about 2 cm thick.

    Tip the dried breadcrumbs into a shallow bowl and turn each patty in them until coated all over, including the edges.

    Heat the rest of the oil in a deep skillet and fry the patties in batches for 6–7 minutes a side, until the crust is deep brown and the center is cooked through.
