Poha
Flattened rice rinsed, steamed with turmeric and finished with lime.
Ingredients
- 7 ozpoha, thick variety
- 1onion, finely chopped
- 1 3/4 ozpeanuts, raw, skin on
- 1 tspmustard seeds
- 12curry leaves
- 2green chillies, finely chopped
- 1/2 tspground turmeric
- 2 tbspvegetable oil
- 1 tspcaster sugar
- 1lime, juiced
- 1/2 ozfresh coriander, chopped
- 1 tspsea salt
Method

Put the poha in a sieve and run cold water through it, tossing with your fingers, until the flakes have softened and swelled. Leave it to drain and fluff it once with a fork.

Warm the oil in a wide pan and fry the peanuts until they darken a shade and smell toasted, then lift them out and set them aside.

Into the same oil add the mustard seeds and wait for them to crackle, then the curry leaves and green chillies. Add the onion and cook until translucent.

Stir in the turmeric, salt and sugar, then fold in the drained poha gently until every flake is yellow. Cover and steam for two minutes on the lowest heat.

Take the pan off the heat and fold through the lime juice, the fried peanuts and the coriander.
