Pinwheel sandwiches

A tortilla spread to the very edge, rolled tight, chilled, then cut into spirals.

Ingredients

  • 4large flour tortillas
  • 7 ozcream cheese, at room temperature
  • 7 ozcooked ham, thinly sliced
  • 3 1/2 ozmature cheddar, grated
  • 1/2cucumber, seeds scraped out, cut into batons
  • 1/4 ozchives, finely snipped
  • 1/4 tspblack pepper

Method

    Beat the cream cheese with the chives and pepper until it is soft enough to spread without dragging.

    Lay a tortilla flat and spread a quarter of the cream cheese over the whole surface, all the way to the rim with no gap anywhere.

    Cover with ham, then cheddar, then a line of cucumber batons across the near third, stopping the fillings about 3cm short of the far edge. Roll up tightly from the near side, pressing as you go.

    Wrap each roll tightly in plastic wrap and chill for at least 30 minutes. Unwrap and cut into 2cm slices with a serrated knife, using a sawing motion rather than pressing down.
