Toast the pine nuts and cook the pasta

Put a large pan of well-salted water on to boil. While it heats, toast the pine nuts in a dry pan until patchily golden, then tip them out to cool. Cook the linguine in the boiling water until al dente.

— Take the pine nuts off the heat while they still look underdone — they carry on coloring in the pan for a good minute after.
