Toast the pine nuts and cook the pasta

Toast the pine nuts in a dry pan until patchily golden, then tip them out to cool. Bring a pan of well-salted water to the boil and cook the linguine until al dente.

— Take the pine nuts off the heat while they still look underdone — they carry on coloring in the pan for a good minute after.
