Onion Bhaji

Sliced onion bound in spiced gram flour and fried in craggy clumps.

Ingredients

  • 3onions, halved and sliced very thinly
  • 4 1/4 ozgram flour
  • 1 ozrice flour
  • 2 tspcumin seeds
  • 1/2 tspground turmeric
  • 1 tspchilli powder
  • 2green chillies, finely chopped
  • 3/4 ozfresh coriander, chopped
  • 1 1/2 tspsea salt
  • 3 3/8 cupsvegetable oil, for deep-frying

Method

    Toss the very thinly sliced onions with the salt in a large bowl and leave them, squeezing them once or twice with your hands as they soften.

    Scatter the gram flour, rice flour, cumin seeds, turmeric, chilli powder, green chillies and coriander straight over the wet onions and work it in with your fingers.

    Squeeze a handful — it should just hold together and look like coated onion rather than batter. Add a spoonful of water only if it is genuinely dry.

    Heat the oil to 340°F and lower in loose spoonfuls, a few at a time, spreading the strands slightly as they go in. Fry until deep golden and crisp all over.

    Lift them onto a rack rather than kitchen paper so the undersides stay crisp, and salt them while still hot.
