Oatmeal cookies

Chewy in the middle, crisp at the rim, and rested in the fridge before they see the oven.

Ingredients

  • 8 3/4 ozrolled oats
  • 6 1/4 ozall-purpose flour
  • 7 ozsalted butter, softened
  • 7 ozlight brown sugar
  • 2 1/2 ozsuperfine sugar
  • 2eggs
  • 5 1/4 ozraisins
  • 1 1/2 tspground cinnamon
  • 1 tspbaking soda
  • 3/4 tspfine sea salt
  • 2 tspvanilla extract

Method

    Beat the softened butter with the brown and caster sugars for 3 minutes until light and fluffy, then beat in the eggs one at a time with the vanilla.

    Mix the flour, baking soda, cinnamon and salt together, then stir them into the butter mixture until nearly combined. Fold in the oats and raisins.

    Cover the bowl and chill for at least an hour, or overnight. Heat the oven to 350°F and line two trays.

    Roll golf-ball-sized pieces, space them well apart and flatten slightly. Bake for 10 to 12 minutes, until the edges are set and the middles still look underdone. Leave on the tray for 5 minutes before moving them.
