Mozzarella sticks
Breaded twice, frozen solid, and fried fast so the crust sets before the cheese runs.

Ingredients
- 14 ozmozzarella, a firm block variety labelled suitable for vegetarians, cut into finger-sized batons
- 2 3/4 ozall-purpose flour
- 3eggs, beaten
- 5 1/4 ozpanko breadcrumbs
- 1 tspdried oregano
- 1 tspgarlic powder
- 1 tspsea salt
- 3 1/8 cupsvegetable oil, for deep frying
- 7 oztomato sauce, to serve
Method

Put the flour in one bowl, the beaten eggs in the second, and the panko mixed with the oregano, garlic powder and salt in the third.

Roll each baton in flour, then egg, then crumbs — and then straight back through the egg and the crumbs a second time.

Lay them apart on a lined tray and freeze for at least an hour, until they are hard all the way through.

Heat the oil to 375°F and fry them a few at a time until deep golden, about ninety seconds. Drain on a rack and serve straight away with the tomato sauce.
