Miso Butter Salmon

Miso and butter mashed together, spread on salmon, ten minutes in a hot oven.

Ingredients

  • 4salmon fillets, skin on, about 150 g each
  • 3 tbspwhite miso paste
  • 1 1/2 ozsalted butter, softened
  • 1 tbspmirin
  • 3scallions, thinly sliced

Method

    Heat the oven to 425°F and line a small baking sheet with parchment. A hot oven is what browns the glaze before the fish overcooks.

    In a small bowl, mash the softened butter, miso paste and mirin together with a fork until they form a smooth, pale paste with no streaks of miso left.

    Sit the fillets skin-side down on the sheet and spread the miso butter thickly over the top of each one. Roast for 9 to 11 minutes, until the glaze is bubbling and patched with brown and the fish flakes when pressed at its thickest point.

    Scatter the sliced scallions over the hot fillets and serve straight from the tray, with rice and something green.
