Ingredients

  • 2green peppers, Turkish sivri if you can get them, finely sliced
  • 8 3/4 oztomatoes, skinned and chopped
  • 4eggs
  • 1 ozunsalted butter
  • 1 tspAleppo pepper, pul biber
  • 1 tspdried oregano
  • 1 3/4 ozfeta, crumbled, to serve
  • 1 tspsea salt

Method

  1. 1

Melt the butter in a wide pan and cook the peppers over medium-low heat with half the salt until they are completely soft and sweet.

  2. 2

Add the tomatoes, the Aleppo pepper and the oregano and cook until the tomato has broken down and the pan is no longer watery.

  3. 3

Turn the heat low, break the eggs straight into the pan and stir them slowly through the vegetables with a wooden spoon so they set in loose ribbons rather than a single sheet.

  4. 4

Season with the rest of the salt, crumble the feta over the top and take the pan straight to the table.
