Rinse until the water runs clear

Put the lentils in a bowl, cover with cold water, swirl with your hand and pour it off. Repeat three or four times until the water stops going cloudy.

— Unrinsed lentils foam hard and boil over. Two minutes here saves cleaning the stove.
