Meanwhile, combine the grated cheese, finely chopped onion, red pepper, salt, pepper, and chilli flakes (if using) in a large bowl.

Split the hot baked potatoes open lengthways, keeping the skins intact. Add 1 tbsp butter to each and mash it thoroughly into the flesh inside the skin with a fork. Stir in about half of the cheese mixture so it melts into the hot potato.

Pile the remaining cheese mixture on top. Add any extra toppings you like — sweetcorn, olives, coleslaw, salami — and serve immediately.
